Tex-Mex is a popular cooking method on the grill, with a little bit of spice and bold flavors of the southern region. Although good alone, it can be so much better with an easy-to-make and incredibly light, creamy avocado spread.
Avocado Spread
-
1 large avocado, peeled and cubed
- 2 teaspoons fresh lime juice
- 1/2 cup Greek yogurt
- 1 tablespoon apple cider vinegar
- 2 tablespoons jalapeño pepper
- 1/4 cup extra virgin olive oil
- 4 garlic cloves
- 1/4 cup chopped cilantro
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
To make the dressing, combine cilantro, avocado, yogurt, garlic, jalapeño, lime juice, white pepper and salt in the bowl of a food processor. On medium speed, add olive oil and apple cider vinegar in a slow stream until emulsified and creamy.
Use as a dip or spread on all grilled meats. In fact, try it at your next grill session.
