Whole30 Chicken Fried Rice
Ingredients
- 3 lbs Chicken thighs
- 1 c Yellow bell pepper, diced
- 1 c White onion, diced
- 2 Carrots, peeled/chopped
- 1/2 c Organic coconut oil
- 5 c Cauliflower, riced
- 1 1/2 c Asian Sauce (see recipe at Grillax.com)
Instructions
- Add coconut oil to FireDisc set to medium-high heat.
- Add diced chicken thighs to FireDisc. Cook until internal temp of 160 degrees.
- Once chicken is up to temperature, move to outside of ring of disc and add onions, carrots and peppers.
- Move chicken thighs to outside of FireDisc ring and add vegetables to center of disc.
- Once vegetables sear and become translucent, move the vegetables to the outside of ring and add riced cauliflower. The cook time for the cauliflower will be no longer than two minutes. Mix all together.
- Once everything is mixed, turn off heat and pour sauce over the mixture. Top with green onions and let sit for five minutes before serving.
