Most of the time when one thinks of pork, they think heavy, unhealthy, sauce-laden meat that is perfect for a grilled cheat day.
That isn’t true, especially when you’re talking chops. We’ve found a fantastic Paleo recipe on wholesomelicious.com that will satisfy even the most finicky dieter … even on cheat days.
We’ve adapted it for the grill. Here’s what you need to get started.
Grilled Cheat Day Chops
- 4-5 Boneless Center Cut Pork Chops (about 3/4 – 1 inch thick)
- 2 tbsp olive oil
For the rub:
- 1 tsp paprika
- 1/2 tsp chipotle chili pepper spice
- 1 tbsp chili powder
- 1/2 tsp coarse sea salt
- 1/2 tsp cumin
- 1 cloves garlic, minced
For the sauce:
- 1 cup canned coconut milk
- 3/4 tsp chipotle chili pepper spice
- 1 tsp liquid smoke
- 3/4 cup chopped fresh cilantro
For garnish:
- Juice of 1 lime
- Chopped fresh cilantro
Begin by heating your grill to high heat. Prepare your pork chops. Mix together ingredients for the rub, brush each pork chop with olive oil. Rub each side of the pork chops with spices. Grill your pork chops for 4-5 minutes per side, or until the center reaches 165 degrees and is only slightly pink. Move to indirect side of the grill. As the pork chops are grilling, mix together coconut milk, chipotle pepper, cilantro, and liquid smoke in a blender or food processor until smooth. Once pork chops are cooked through, pour the sauce on top and let grill for 2 minutes. Garnish with juice of 1 lime and extra cilantro and serve immediately, preferably with a side of grilled sweet potatoes.
