The Ultimate Beef Rub can be described as any mix of dry ingredients that create a flavorful, crunchy crust, at least by Texas standards.
To give beef a rich flavor, our pro staff added finely ground dark-roasted coffee to the mix. An espresso blend could easily be used in this rub. What the coffee does is give the rub a deep, earthy flavor to the mix without overpowering the key herbs.
If you have a brisket session on the horizon, make this beef rub well in advance of your fire date. The following recipe makes more than needed. The great thing is you can store the remainder of your rub for about a year, but, this is so easy, just make it fresh.
Ultimate Beef Rub
- 1 1/2 tablespoons sea salt
- 1 1/2 tablespoons garlic powder
- 1 tablespoon onion powder
- 1 teaspoon coarse black pepper
- 1 teaspoon white pepper
- 1 tablespoon dark brown sugar
- 1/4 teaspoon chipotle powder
- 2 tablespoons dark-roast coffee, finely ground
- 1/4 teaspoon cloves
- 1/4 teaspoon cinnamon
- 1/4 teaspoon coriander
Mix the ingredients in a bowl with a whisk. Store the rub in a tightly sealed container in a closed pantry. You can expect this to last about a year, but will see a degrade in the rub if some air gets to the mix.
