One of the truly underrated beef cuts in BBQ is the Tri Tip. Reasonably priced and full of flavor, this beef cut is from the bottom sirloin.

Ingredients
  

  • 3 lb Tri Tip roast
  • 1/4 c light olive oil
  • 2 Tbsp garlic paste

Instructions
 

  • Set up your grill or smoker to 225 degrees Fahrenheit.
  • Rub your tri tip with olive oil, garlic paste and generously season on all sides with our Grillax Tri Tip Rub.
  • Set your Tri Tip on the indirect side of your grill, or middle rack if smoking, and grill until the internal temperature reaches 140 degrees Fahrenheit. This could take 1-2 hours, depending on the size of your cut.
  • Allow the Tri Tip to rest for 10 minutes. Slice against the grain and serve with mashed potatoes and Brussels sprouts.

Notes

Tri Tip can reach an internal temperature of 140 degrees Fahrenheit in just 1.5 to 2 hours. (That’s a medium-well smoke)

The Ultimate Beef Rub can be described as any mix of dry ingredients that create a flavorful, crunchy crust, at least by Texas standards.

Ingredients
  

  • 1.5 Tbsp sea salt
  • 1.5 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 Tbsp coarse black pepper
  • 1 tsp white pepper
  • 1 Tbsp dark brown sugar
  • 1/4 tsp chipotle powder
  • 2 Tbsp dark-roast coffee, finely ground
  • 1/4 tsp cloves
  • 1/4 tsp coriander
  • 1/4 tsp cinnamon

Instructions
 

  • Mix the ingredients in a bowl with a whisk. Store the rub in a tightly sealed container in a closed pantry. You can expect this to last about a year, but will see a degrade in the rub if some air gets to the mix.
