Equipment

  • 1 80 quart stock pot
  • 1 Boil basket
  • 1 Jet burner

Ingredients
  

  • 4 lbs green peanuts
  • 2/3 c sea salt
  • 6 Tbsp Cajun seasoning
  • 6 tsp crushed red pepper
  • 1 Tbsp garlic paste
  • 1 c Hoover Sauce
  • 8 q water

Instructions
 

  • Add the peanuts, salt, cajun seasoning, crushed red pepper, Hoover sauce and garlic paste to water. Make sure it's enough to cover the peanuts when pushed down.
  • Cover the pot and bring to a boil. Once boiling, stir well, then lower the heat to simmer. Cover and cook for 2-3 hours for green peanuts. Check the water level every hour and add warm water if needed. (6-8 hours if raw peanuts)

Notes

Raw Peanuts vs. Green Peanuts

Raw Peanuts are dry and raw. Green Peanuts are fresh from the field and soft. Because raw peanuts are dry, they do take longer to cook than green peanuts. If you catch it right, you can eat the shell on a green peanut, as well!
