Ass-Kickin’ Boiled Peanuts
Equipment
- 1 80 quart stock pot
- 1 Boil basket
- 1 Jet burner
Ingredients
- 4 lbs green peanuts
- 2/3 c sea salt
- 6 Tbsp Cajun seasoning
- 6 tsp crushed red pepper
- 1 Tbsp garlic paste
- 1 c Hoover Sauce
- 8 q water
Instructions
- Add the peanuts, salt, cajun seasoning, crushed red pepper, Hoover sauce and garlic paste to water. Make sure it's enough to cover the peanuts when pushed down.
- Cover the pot and bring to a boil. Once boiling, stir well, then lower the heat to simmer. Cover and cook for 2-3 hours for green peanuts. Check the water level every hour and add warm water if needed. (6-8 hours if raw peanuts)
