We love to cook on a smoker, and we do so year-round. Most of the time, we have leftovers and store them away in the freezer until times like now … Super Bowl parties.

Honestly, it doesn’t have to be the NFL’s Championship Weekend to enjoy our Super Bowl Brisket Queso Dip. This stuff is great anytime of year, and can be served at home or taken to a tailgate.

For this recipe, we chop leftover smoked brisket and add it to our queso before adding another kiss of smoke. With all of our goodies placed in a extra large cast-iron skillet, we add it to our smoker to grab some smoky flavors to our ingredients.

We tend to use pecan wood with our cheese smokes, even our cold smokes. The flavor from the smoke adds a little bit of sweetness to what we smoke without overpowering the dish.

After the first dunk of your chip into this Super Bowl Brisket Queso Dip you will instantly become a fan, and may hover over the skillet keeping others from sampling this garlicky, cheesy masterpiece.

Equipment

  • 1 Extra Large Cast-Iron Skillet

Ingredients
  

  • 1 lb smoked brisket, chopped
  • 1 Tbsp garlic paste
  • 7 oz Adobo-marinated chipotle peppers
  • 16 oz Cream cheese, softened
  • 1/2 Yellow onion, chopped
  • 16 oz Chili beans, can
  • 2 c Pepper Jack cheese, shredded
  • 1 c Mild cheddar cheese, shredded
  • 1 Jalapeño, sliced
  • 1 bunch green onions, chopped
  • 10 oz Queso Fresco, crumbled
  • 1 handful of pecan wood chips

Instructions
 

  • Preheat smoker to 350 degrees Fahrenheit
  • Mix garlic paste with softened cream cheese until thoroughly combined.
  • Spread cream cheese evenly in the bottom of an extra-large cast-iron pan. Evenly layer ingredients in the following order: Chipotle peppers, onions, brisket, chili beans, pepper jack, cheddar and sliced jalapeños.
  • Place the cast iron into smoker 60 minutes. Add pecan chips to smoker box or tube.
  • Top with queso fresco crumbles and green onions.
  • Serve with tortilla chips.
