Instructions
Put your peanut oil in the FireDisc cooker to about half full. Set your FireDisc to high and bring temperature to 375 degrees. Use a Thermapen to make sure you are up to temperature before frying your filets. After covering your fish filets with the seasoned corn meal, drop each filet carefully into the oil. Turn the fish once or twice and fry until the filets float and become golden brown. Remove the fish filets from the oil and let drain.
Now you're ready to put the tacos together. Grab a soft tortilla in one hand and load it up with the fish filets, cole slaw, shredded cheese, salsa, cilantro, jalapeños and Sriracha sauce (for more bite). It's that simple, and oh, so good.
