Easy Wild Game Marinade

This wild game steak recipe is made with a delicious marinade with a nice garlicky kick.

Ingredients

  • 1 1/2 c extra-virgin olive oil
  • 3/4 c soy sauce
  • 1/2 c red wine vinegar
  • 1/2 c freshly squeezed lemon juice
  • 1/4 c Worcestershire sauce
  • 2 garlic cloves, peeled and crushed
  • 1 1/2 t rough-chopped fresh parsley
  • 2 T dry mustard
  • 2 1/4 t sea salt
  • 1 t coarse black pepper
  • 2 lbs wild game steaks or chunks

Instructions

  • Combine all marinade ingredients in large bowl. Submerge wild game in the marinade, cover with plastic wrap and refrigerate up to 12 hours.
  • Heat grill to medium high heat. Remove wild game from marinade and season with salt and pepper. Working in batches if necessary, place proteins directly over coals, flipping once, until medium-rare.
