1 1/2cextra-virgin olive oil
3/4csoy sauce
1/2cred wine vinegar
1/2cfreshly squeezed lemon juice
1/4cWorcestershire sauce
2garlic cloves, peeled and crushed
1 1/2trough-chopped fresh parsley
2Tdry mustard

Instructions
Combine all marinade ingredients in large bowl. Submerge wild game in the marinade, cover with plastic wrap and refrigerate up to 12 hours.
Heat grill to medium high heat. Remove wild game from marinade and season with salt and pepper. Working in batches if necessary, place proteins directly over coals, flipping once, until medium-rare.
